 Post subject: Bacon wrapped tenderloin

This is a pair of fresh tenderloins off a wild hog, but will be just as yummy with venison tenderloin.

The tenderloins:

Lightly season with your season of choice...or not, and wrap tight with bacon:

I cook them on a medium heat on the top rack about 15minutes a side. Then put them on the lower rack on high to crisp the bacon up a little. You really have to watch them to keep it from flaring up and burning the bacon.

Absolutely every bit as good as it looks and better:

I can't tell the difference. Whether it's a roast, chops, loin, or whatever, I think it cooks up about as well. I really enjoy venison, but given the choice, I stock my freezer w/wild hog.

I can't imagine eating any meat that is significantly better than those bacon wrapped tenderloins. :mrgreen:
