Good article. I've been wearing latex gloves for 20yrs to butcher all game. Initially for easier cleanup afterwards, but for sanitary reasons these days. I use the whole hog for the most part. As soon as I finish gutting the animals it is hung and the inside is thoroughly rinsed out. Then it's quartered and on ice or quartered and hung in our Dr. Pepper drink box for cooling. Honestly, I'm no more or less careful than I was 10yrs ago. Everything I read says the risks are there, but by the numbers it makes me think that the day I catch "something" from a wild pig is also the day I should go out and by a lottery ticket.
Still, the article is a good reminder to be careful for ourselves and our pooches.
