Very good article.

My daughter is a Veterinarian, and has given all of us the same warnings.
We always wear gloves to butcher the pigs and never open the abdominal cavity. We just take the backstraps and the rear hams. Some of the guys in our camp take the front shoulders too.

Personally, I usually just kill them and drag'em off; occasionally I'll take the backstraps.

Good article. I've been wearing latex gloves for 20yrs to butcher all game. Initially for easier cleanup afterwards, but for sanitary reasons these days. I use the whole hog for the most part. As soon as I finish gutting the animals it is hung and the inside is thoroughly rinsed out. Then it's quartered and on ice or quartered and hung in our Dr. Pepper drink box for cooling. Honestly, I'm no more or less careful than I was 10yrs ago. Everything I read says the risks are there, but by the numbers it makes me think that the day I catch "something" from a wild pig is also the day I should go out and by a lottery ticket. :mrgreen:

Still, the article is a good reminder to be careful for ourselves and our pooches.

I've got a buddy that dresses his pigs out whole and then roast them in a special pig roasting box called a "La Caja China Roasting Box"...Man, they come out unbelievably tender and delicious!

I know I'll be especially careful if those nasty thangs come rolling through the A.O.
I figure the pooches stand a greater chance in some instances than we do. Roscoe, if ya start feeling wierd than go get checked right away!
That pig roasting box looks pretty trick! I never saw one like this before. Great post, T post!
Just be careful fellas and ladies if you happen to bust one of these.

That's a cool looking rig Pat. You gonna start building and selling them? :mrgreen: :wink:

I'm careful with them. I'm more worried about my lab than me. Last one I took the 4 quarters and the straps w/o gutting the hog. Never done that before. Worked out surprisingly well.
